How It Works

The Defrost Time Estimator calculates approximate thawing times based on USDA guidelines. Actual times may vary depending on your refrigerator temperature, meat thickness, and packaging.

Methods
  • Refrigerator (35–40°F / 2–4°C): Safest method. Allow roughly 24 hours per 5 lb (2.3 kg). Small items thaw overnight. Thawed meat stays safe 1–2 days before cooking.
  • Cold Water (changed every 30 min): Faster alternative. Allow roughly 30 minutes per lb (0.45 kg). Meat must be in a leak-proof bag. Cook immediately after thawing.
  • Microwave (defrost setting): Fastest method. Allow roughly 7–8 minutes per lb. Cook immediately after defrosting, as some areas may begin to cook.
Factors That Affect Thaw Time
  • Shape and thickness: Flat cuts thaw faster than thick roasts or whole birds
  • Bone-in vs. boneless: Bone conducts heat, slightly speeding up thawing
  • Packaging: Vacuum-sealed items may thaw slightly slower
  • Starting temperature: Deep-frozen items (below 0°F / -18°C) take longer
Food Safety
  • Never thaw at room temperature—bacteria multiply rapidly between 40–140°F (4–60°C)
  • Cook cold-water and microwave-thawed meat immediately
  • Refreezing is safe only for refrigerator-thawed meat (quality may decrease)
  • When in doubt, use a food thermometer to verify safe cooking temperatures
